Truly tasty, a Passionfruit Lime Mojito is perfect for sultry summer evenings. This easy recipe makes two mojitos, but there is no reason you couldn’t make up a big jug for a party. Top this refreshing drink with soda just before serving.

1limecut into 6 wedges
3-4tspsoft brown sugarheaped
small bunch of mint
120mlwhite rum
100mlpassion fruit juice
2ripe and juicy fresh passion fruitpulp and seeds
club soda water

MUDDLE THE LIME AND MINT: Divide the lime wedges, sugar and a few mint leaves between two sturdy, tall glasses. Use the handle of a wooden spoon (or a muddling stick) to press firmly down on the limes, releasing the oils and juices. Be firm but gentle, you want to release the oils but not destroy the mint leaves (or your glass!)
ADD THE LIQUIDS: Add the rum, passion fruit juice, passion fruit pulp and seeds to each glass and give it a quick stir to combine. Top with crushed ice and a splash of soda water. Garnish with a mint sprig or mint leaf.
SERVE AND ENJOY!: You'll need a wide straw to enjoy these mojitos so they don't get clogged with passionfruit seeds!

Because lime and passionfruit are quite tart, it's use to keep some simple syrup to hand to add a little sweetness if necessary. To make simple syrup combine 2 cups of white sugar (400g) with 2 cups of water (500ml) and heat in a small saucepan until the sugar is dissolved. Cool and then store in a clean bottle in the fridge.If you like your mojito on the sour side, simply add a little fresh lime juice. Like even more passionfruit flavour? Use passion fruit lemonade instead of soda!Like your mojito with a little more oomph? The best way to add tons of flavour is to use a spiced dark rum instead of white rum.
